Think gluten-free pasta salad has to be boring? This Asian chicken pasta salad recipe proves it doesn't. The flavors remind us of rice that we've eaten at a Hibachi restaurant, except it's with pasta. The dressing has classic Asian ingredients like rice vinegar, tamari, sesame oil, and mirin. Once combined with the chicken and carrots, it adds a ton of savory flavor. It tasted delicious hot and cold.

Ingredients For asian chicken pasta salad

  • 1/4 c
    sesame seeds, lightly toasted
  • 12 oz
    gluten-free rotini pasta
  • 1/2 c
    vegetable oil
  • 1/3 c
    gluten-free soy sauce or tamari
  • 1/3 c
    seasoned rice vinegar
  • 1 tsp
    sesame oil
  • 1 tsp
    chili oil
  • 1/4 c
    mirin (sweetened sake)
  • 1/8 tsp
    garlic powder
  • 1/8 c
    finely chopped onion
  • 3 c
    chicken breast, cooked and shredded (about 1.5 lbs chicken breast)
  • 3/4 c
    finely chopped or shredded carrot

How To Make asian chicken pasta salad

  • Boiling gluten-free pasta.

    Boil gluten-free pasta (I recommend Schar's) in lightly salted water according to the manufacturer's directions. Drain and rinse with cold water. Transfer to a large bowl.
  • Combining vegetable oil, soy sauce, rice wine vinegar, sesame oil, mirin, chili oil, and garlic powder.

    While pasta is cooking, combine vegetable oil, soy sauce, rice wine vinegar, sesame oil, mirin, chili oil, and garlic powder. Shake or whisk until blended.
  • Adding chicken, onion, carrot, and sesame seeds to pasta in the bowl.

    Add shredded chicken, chopped onion, chopped carrot, and toasted sesame seeds to pasta in the bowl. Toss lightly.
  • Pouring marinade over the bowl of gluten-free pasta.

    Pour marinade over and gently combine. Chill for one hour or more until ready to serve.
