Ingredients For roast beef salad

2 Tbspchopped fresh parsley or 2 tsp dried

2 Tbspred wine vinegar

2 tspdijon mustard

1 tspgrated white horseradish

1/4 cvegetable oil, i use canola

1/2 tspsugar

1/4 tspsalt
-
1/8 tsppepper
-
1 1/2 lbthick sliced roast beef from the deli, cut into 1 inch strips

1 smtomato, chopped

1shallot, thinly sliced
How To Make roast beef salad

1Combine everything except beef, tomato and shallot in a large bowl.

2Add the beef, tomato and shallot (i use a green onion since can't find shallots here) toss to coat well

3I like to let this sit in the fridge for the day. Store bought roast beef makes this so easy to whip up. I try to catch a time to make it when the deli has the beef on sale.
