4 large carrots, (cut into 2 inch pieces)
3 tablespoons olive oil, (divided)
½ teaspoon seasoned salt
½ teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon dried thyme
Fresh ground black pepper, (to taste)
2 zucchini, (sliced into 1 inch thick pieces and then each slice cut into half moons)
Salt, (to taste, for the zucchini)
Chopped fresh parsley, (for garnish)
