Ingredients For russ's zucchini relish

  • 10 C. zucchini, unpeeled and shredded
  • 4 C. onions, shredded
  • 5 Tbs. canning salt
  • 2 1/2 C. white vinegar
  • 5 C. sugar
  • 1 Tbs. dry mustard
  • 1 Tbs. turmeric powder
  • 1 Tbs. cornstarch
  • 2 Tbs. celery seed
  • 1 green pepper
  • 1 red pepper

How To Make russ's zucchini relish

  • 1
    Shred zucchini, onion and peppers. Place in large bowl. Sprinkle with salt. Mix well and let stand overnight. Rinse vegetables 3-4 times and drain. Place drained vegetables in a large pot and add all other ingredients. Boil for 30 minutes, stirring as needed. Pour into hot sterile jars/cap and place in hot water bath for 10 minutes.
