This recipe, using fresh from the garden vegetables is a must for those who practice food storage (canning, freezing). It's simple, easy and it freezes well. Our family prefers this served while still partially frozen.

Ingredients For russ's cole slaw (freezer cabbage)

  • 4 lbs. green cabbage
  • 1 green pepper
  • 1 carrot
  • 1 onion
  • 1 Tbs. canning salt
  • 2 C. sugar
  • 1 C. cider vinegar
  • 1/2 C. water
  • 1 tsp. celery seed
  • 1 tsp. mustard seed

How To Make russ's cole slaw (freezer cabbage)

    Chop or shred cabbage. Chop green pepper. Shred carrot and onion. Mix vegetables. In a large mixing bowl, sprinkle vegetables with salt and mix well. Cover with food wrap and set aside.

    In a medium pan, mix together sugar, vinegar, water, celery seed, and mustard seed. Boil mixture for one minute. Set aside, let cool one hour.

    Mix syrup with vegetables Place in containers (plastic freezer bag) and freeze.
