Ingredients For russ's beef salami

  • 2 lbs. hamburger
  • 2 1/2 Tbs. Morton's Tender-Quick salt (meat cure)
  • 1 Tbs. sugar
  • 1/2 tsp. garlic
  • 1 tsp. cayenne pepper
  • 1 tsp. ground pepper
  • 1 C. dry milk
  • 1/3 tsp. ground cloves
  • 2/3 tsp. garlic powder

How To Make russ's beef salami

  • 1
    Mix all ingredients well and form into 3 long rolls in the shiny side of foil. Bake in a 325-degree oven for 1 to 1 1/4 hours, or roll in waxed paper and bake in microwave oven 7 to 8 minutes. If baked in foil, poke holes in bottom of foil and put in broiler pan to bake in oven.
