INGREDIENTS
70 grams lukewarm whole milk (1/3 cup)
1 packet instant yeast (7 grams)
130 grams all-purpose flour (1 cup plus 1 tbsp)
1 tbsp sugar
the sponge made from the ingredients above
450 grams all-purpose flour (2 1/4 cups)
120 grams confectioners sugar (a scant cup)
1 packet instant yeast (7 grams)
1 pinch salt
zest of one orange
60 grams lukewarm whole milk (a scant half-cup)
2 eggs (extra large)
30 ml orange-blossom water (2 tbsp)
70 grams salted butter (5 tbsp)
1 cup sugar
a few drops of orange-blossom water
lots of fresh sweet whipped cream
