INGREDIENTS
5 medium size yukon gold and/or red potatoes, about 2 lbs, diced into 1/2"- 3/4" pieces
2-3 tablespoons olive oil
1 1/2 teaspoons salt, divided
1 teaspoon freshly ground black pepper, divided
1 lb brussels sprouts, sliced into 2-3 pieces each
1 large red bell pepper, sliced into thin strips
1/2 lb bacon, cut into 1/2" pieces, 2 tablespoons grease reserved after cooking
