INGREDIENTS

2 lbs fingerling potatoes (washed and patted dry)

1 tablespoon olive oil
•
1 tablespoon kosher salt (much of this will wind up on the baking tray)

Dipping Sauce Ingredients:

1/2 cup sour cream
•
1/4 cup mayonnaise
•
2 chipotle peppers (I used mine straight from the freezer)
•
2 garlic cloves (minced)
•
1/2 teaspoon cumin
•
1/2 teaspoon smoked paprika
•
1/4 teaspoon kosher salt
•
1 teaspoon white wine vinegar (I used the garlic infused vinegar from our preserved garlic)
