INGREDIENTS
2 Tbs. extra-virgin olive oil
1 pound carrots, multi-color is even better!
1 (15 oz) can chickpeas, drained and rinsed
1 Tbs. ground cumin
1 cup Greek yogurt
2 Tbs. fresh lemon juice
1 garlic clove, grated
1/3 cup pine nuts, lightly toasted in a small pan
one bunch cilantro, about 1/3 cup chopped, and extra sprigs for garnish
Coarse salt and pepper
