½ cup coarsely chopped scallions (white and green parts, about 6 scallions)

2 tablespoons chopped fresh chives

1 tablespoon chopped fresh basil or 1 teaspoon dried

1 garlic clove

1½ tablespoons apple cider vinegar

¾ teaspoon kosher salt

Juice of 1 lemon

½ to ⅓ cup extra virgin olive oil

For SALAD You will need:
•
1 cup long-grain rice, cooked and cooled
•
2 cups walnut halves
•
1 medium Fuji apple, cored and diced
•
2 tablespoons extra virgin olive oil
