Recipe: Philly Cheesesteak Pasta Skillet

"If I know I've got a busy day ahead, I'll prep the onions, peppers, garlic, and cheese the night before. That way when I'm pressed for time I'll be a few minutes from Philly...."

INGREDIENTS
1 tablespoon olive oil
1 large yellow onion, halved and sliced 1/2-inch thick
1 teaspoon kosher salt, divided
1 medium red bell pepper, halved and sliced 1/2-inch thick
1 clove garlic, minced
1 pound ground chuck
1/2 teaspoon freshly ground black pepper
8 ounces dry rotini pasta
2 (14.5-ounce) cans low-sodium chicken broth
1 1/2 cups (4 1/2 ounces) shredded provolone cheese, divided
1 1/2 cups (4 1/2 ounces) shredded pepper jack cheese, divided
