INGREDIENTS
1/2 cup red quinoa -- rinsed and drained
1/2 cup golden quinoa -- rinsed and drained
1 tablespoon butter
1 1/3 cups water
2 tablespoons extra virgin olive oil + more as needed for onions and zucchini
4 ounces sliced prosciutto -- cut into 1/4" pieces
1 large fennel bulb -- sliced 1/8" thick
1 medium sweet yellow onion -- sliced 1/8" thick
salt and pepper
3 cups zucchini -- cut 1/2" thick
1 large red bell pepper -- diced
3 cloves garlic -- minced
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
