2 tbsp (25 mL) olive oil, divided
4 skinless, boneless chicken breasts (1' lb/750 g)
2 cloves garlic, minced
28 oz (796 mL) can diced tomatoes, with liquid
2 tbsp (25 mL) fresh basil, chopped (or 2 tsp/ 10 mL dried)
1 1/2 cup (375 mL) mozzarella cheese, shredded
1 tbsp (15 mL) Parmesan cheese, grated
salt and pepper to taste
