INGREDIENTS
1/4 cup butter
1 1/2 cups chopped yellow onions
1 ½ cups finely chopped pumpkin
4 cloves garlic, crushed and finely chopped
3 15 oz cans black beans, rinsed and drained
1 16 oz can diced tomatoes
4 cups beef stock
1 ½ cups fresh corn kernels
1/4 pound Bayonne ham, cut into thin slices and chopped
1/4 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons sherry vinegar
