Creamy Lemon Oatmeal Bars

Ingredients

  • CRUST
  • 1 1/2 c all-purpose flour
  • 1 c rolled oats
  • 1/2 c butter, softened
  • 1/2 c brown sugar, packed
  • 1/4 tsp salt
  • 1/2 - 3/4 c shredded coconut, toasted (optional)
  • FILLING
  • 2 lg lemons, zested
  • 1/2 c lemon juice
  • 1 can sweetened condensed milk (14 oz)
  • 1/2 c sour cream

Directions

  • Step 1
    Preheat oven to 375 degrees F. Spray or grease a 9" baking dish.
  • Step 2
    In a bowl, mix together the crust ingredients until crumbly. Press half of the mixture into the baking dish.
  • Step 3
    In another medium bowl, mix the filling ingredients, stirring until thickened, and no lumps remain.
  • Step 4
    Spread filling mixture evenly over the crust. Sprinkle the remaining crust mixture on the top.
  • Step 5
    Bake for 20 minutes or until edges are golden brown.
  • Step 6
    Cool and cut into bars. Refrigerate or freeze any leftovers.
