1 Tablespoon Olive Oil
1 Onion (optional, chopped)
3 - 4 cloves Fresh Garlic (minced)
28 ounces Diced Tomatoes
6 ounces Tomato Paste
30 ounces Tomato Sauce
3 teaspoons Dried Basil
2 teaspoons Parsley Flakes, dried
2 teaspoons Brown Sugar
2 teaspoons Sea Salt
1/4 - 1/2 teaspoon Red Pepper Flakes (crushed)
1/4 teaspoon Freshly Ground Black Pepper
1/2 cup Red Wine/Cabernet (a good Cabernet!)
1/2 cup Fresh Water
2 teaspoons fennel seeds (crushed)
Parmesan Rind chunk (optional)
