3 Tbs. butter
1/2 cup chopped onion
1 tsp. chopped fresh garlic
1 small, ripe pear or apple, peeled and cored, shredded
1 pound chicken, turkey, or duck livers, rinsed, trimmed and cut in half (about 10 chicken livers)
1/4 cup Cognac or Calvados
1 stick cold butter
