INGREDIENTS

4 slices of lean bacon, cut into bits

1 sweet yellow onion, sliced thinly
•
1 cup chicken broth
•
2 lbs Yukon gold potatoes, peeled and sliced into 1/4 inch thick half moons (I used a mandoline slicer)
•
Sea salt and freshly cracked pepper, to taste
•
1 bay leaf
•
1 sprig of fresh thyme
