Crust:
1 + 1/2 cups (6 1/4 ounces) all-purpose flour
1/2 teaspoon salt
1/4 teaspoon baking powder
1/3 cup (2 3/8 ounces) olive oil
3 to 4 tablespoons (1 1/2 to 2 ounces) water or milk
Filling:
2 - 3 small to medium (about a pound) cooked, cooled potatoes (bake or microwave them)
1 + 1/3 cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
6 slices bacon, cooked and crumbled
5 large eggs
1 cup milk
1 tablespoon chopped fresh thyme
3/4 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
