INGREDIENTS
1 lb 10 oz (750 g) baking potatoes, such as Burbank or russet, peeled and cut into 1 in (2.5 cm) chunks
3 tbsp all-purpose flour
1/3 cup freshly grated Parmesan
vegetable oil for frying
1 large egg yolk
1 tbsp capers
salt and freshly ground black pepper
lemon wedges, to serve
