INGREDIENTS

12 whole-wheat lasagna noodles, (about 3/4 pound)
2 tsp olive oil
12 oz portobello mushrooms, chopped
1⁄2 tsp salt
4 cup Easy Tomato sauce, recipe follows, or store bought marinara sauce
15 oz container part-skim ricotta cheese
10 oz package chopped frozen spinach, thawed and drained
1 egg, lightly beaten
1 black pepper, freshly ground
1 pinch ground nutmeg
1⁄4 cup parmesan cheese, grated
3 oz part skim milk mozzarella cheese, grated (about 2/3 cup)
1 tbsp olive oil
1 medium onion, finely chopped
2 clove garlic, minced
28 oz cans whole tomatoes, drained and chopped
3 tbsp tomato paste
1 tsp dried oregano
1 bay leaf
1 salt
1 black pepper
