INGREDIENTS
1 1/2 pounds purple-top turnips, peeled
2 teaspoons peanut oil
6 scallions, sliced into 1-inch pieces
1 tablespoon minced fresh ginger
1 large clove garlic, minced
8 ounces pork tenderloin, cut into 1-inch pieces
3 cups low-sodium chicken broth
3 cups water
2 tablespoons white miso (see Tips)
1 tablespoon reduced-sodium soy sauce
1 tablespoon Shao Hsing rice wine (see Tips) or dry sherry
6 ounces mushrooms, sliced (about 3 cups)
6 cups baby spinach
