"I know everybody says this about their mom, but my mother makes the most incredible meatballs. Really! They always come out as light as a feather, absolutely delicious, and utterly addictive. Nobody is able to eat just one. Here is my take on Mom's meatballs. Hope you like them as much as I do...."

1/2 cup cubed day-old bread
1/4 cup whole milk
11/2 pounds medium-ground pork (20% fat)
1/2 cup ricotta cheese
1 garlic clove, minced
1 shallot, minced
2 tablespoons chopped fresh flat-leaf parsley
Grated zest of 1 lemon
1/2 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1 teaspoon kosher salt
2 tablespoons olive oil
1/2 cup torn fresh basil leaves
1/4 cup freshly grated
Parmesan cheese
