Many cooks recommend boiling fish as an ideal way to enhance their flavor. Two rough fish species that have an exceptional taste when prepared in this manner are burbot (or laywer) and fresh water drum. Both species supply boneless fillets This dish is best served with potatoes, a vegetable, pickles, coleslaw, and rye bread. Super!

Ingredients For poor man's lobster

  • 2 qt
    water
  • 2 Tbsp
    salt
  • 1
    sheepshead fish, cleaned and cut into fillets
  • 1/2 c
    butter, melted
  • 2 Tbsp
    lemon juice
  • salt and pepper, to taste

How To Make poor man's lobster

  • 1
    Bring water seasoned with salt to a boil. Drop fillets into boiling water and return to boil. At full boil, allow fish to remain in water 3 to 4 minutes. Mix butter and lemon juice. Remove fish and sprinkle with melted butter mixture.
