2 pounds potatoes, peeled and cut into 2-inch pieces

¼ cup butter, softened

½ cup sour cream or plain, nonfat Greek yogurt

Salt and pepper to taste

¼ pound grated mozzarella cheese (you could use more if you really love cheese)
•
3 medium-size fresh tomatoes, sliced ¼ to ½-inch thick
•
1½ teaspoons fresh oregano, chopped (1 teaspoon if using dried)
•
1½ teaspoons fresh basil, chopped (1 teaspoon if using dried)
•
Salt and pepper to taste
•
½ cup Parmesan cheese, freshly grated
