(if using leftover mashed potatoes, stir in 1/2 c sour cream with cream cheese)

6 green onions, thinly sliced (save a bit of the greens to top the casserole with)

1/4-1/3 c bacon pieces/bits (use pre-pkgd real bacon bits to make things faster and easier)
