1 1/4 cup packed Brown Sugar
3/4 cup Vegetable Oil
3 Eggs
1 tsp Vanilla
2 2/3 cup Shredded Carrots (4 carrots)
2/3 cup Dried Currants, or Raisins chopped finely
1 cup (16 Tbsp, or 2 sticks) Unsalted Butter, cut into pieces and then softened at room temperature
3 cups Powdered Sugar, sifted
1/3 cup Buttermilk Powder
2 tsp Vanilla Extract
1/4 tsp Salt
12 Ounces Cream Cheese, cut into pieces
2 cups Pecans, toasted and chopped
