2 - 3 large garlic cloves, crushed
•
1 tbsp coconut or avocado oil
•
2 large tomatoes, sliced (grape tomatoes work too)
•
Pinch of salt and ground black pepper
•
2 cups Kalamata olives, pitted & cut in halves
•
1/4 cup parsley, finely chopped
•
3 tbsp basil, finely chopped
•
3 oz goat cheese, crumbled
•
Salt to taste (if necessary)
