INGREDIENTS
For the Chicken:
2 pounds of boneless skinless chicken breasts (I had 4 chicken breasts)
1 cup pecans
1 cup yellow cornmeal
1/4 tsp cayenne pepper
1 egg
salt and pepper
olive oil
For the honey mustard sauce:
1/3 cup dijon mustard
1 tbsp whole grain mustard
1 tbsp olive oil
1/2 cup honey
salt and pepper, to taste
