PEAR FILLING
5 tablespoons unsalted butter
1/4 cup plus 2 tablespoons pear nectar
5 tablespoons all purpose flour
1/2 teaspoon ground cardamon
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 tablespoons heavy cream
4 pounds mixed pears, (such as Anjou and Bartlett)
2/3 cup granulated sugar
2 tablespoons fresh lemon juice
RASPBERRY FILLING
3 packages (6 ounces each) Driscoll's Raspberries
3 1/2 tablespoons instant quick cooking Tapioca
3/4 cup granulated sugar
EGG WASH FOR CRUST
1 egg yolk
2 tablespoons heavy cream
Demerara sugar, for sprinkling
PIE CRUST
2 1/2 cups multi-purpose flour
2 tablespoons granulated sugar
1 teaspoon sea salt, fine ground
20 tablespoons (2 1/2 sticks) butter, frozen
3 tablespoons vodka, freezer cold
3 tablespoons cold water (increase to 6 tablespoons if not using vodka)
