INGREDIENTS
Fruit
2 pounds ripe but firm peaches (4 to 5 medium), peeled, pitted, and cut into 1/4-inch-thick wedges (see note)
6 tablespoons sugar
2 tablespoons peach schnapps (see note)
Biscuits
2 cups unbleached all-purpose flour (10 ounces)
2 teaspoons baking powder
2 tablespoons sugar
3/4 teaspoon table salt
2/3 cup buttermilk, cold (see note)
1 large egg
8 tablespoons unsalted butter, melted and cooled slightly
Whipped Cream
1/2 cup heavy cream
1 tablespoon sugar
1/2 teaspoon vanilla extract
