Peach Crumb Bars

4 1/2 cups peaches, peeled, pitted and diced (about 8 small peaches, use firm but ripe)

1 3/4 cup granulated sugar, divided

3 1/2 Tbsp cornstarch
•
1/2 tsp cinnamon
•
1/4 tsp nutmeg
•
1/4 tsp ginger
•
2 Tbsp orange juice
•
1 tsp orange zest (optional)
•
3 cups all-purpose flour
•
1 tsp baking powder
•
1/2 tsp salt
•
3/4 cup salted butter, cold and diced into cubes
•
1 large egg
•
1/4 cup sour cream
•
1 1/2 tsp vanilla extract
•
1 Tbsp Turbinado sugar (optional)
