This white bean and spinach soup is great! Healthy and fairly easy to make, it has an Italian flair. Italian turkey sausage provides a nice base of flavor. It's packed with navy beans, celery, carrots, wild rice, and spinach in a rich broth. Cayenne pepper does add a kick, so cut back if you don't like spice. A delicious soup on a cold evening.

    dried navy beans
  • 2 Tbsp
    coconut oil

    black wild rice

  • 5 oz
    fresh spinach

We couldn't find black wild rice and substituted a wild rice medley. We suggest waiting to add the rice until after the beans have cooked to prevent the rice from becoming too mushy.
  • Soak beans in water.

    Soak beans for 6 hours in water.
  • Crumble and brown the sausage.

    Heat oil in a large pot over medium heat. Remove sausage from the skin. Brown and crumble.
  • Add diced carrots, celery, and onions.
