This white bean and spinach soup is great! Healthy and fairly easy to make, it has an Italian flair. Italian turkey sausage provides a nice base of flavor. It's packed with navy beans, celery, carrots, wild rice, and spinach in a rich broth. Cayenne pepper does add a kick, so cut back if you don't like spice. A delicious soup on a cold evening.

2Italian turkey sausage links

1 cdiced carrots

2 stalkcelery, diced

How To Make white bean and spinach soup
Test Kitchen Tips
We couldn't find black wild rice and substituted a wild rice medley. We suggest waiting to add the rice until after the beans have cooked to prevent the rice from becoming too mushy.

1Soak beans for 6 hours in water.

2Heat oil in a large pot over medium heat. Remove sausage from the skin. Brown and crumble.

3Add diced carrots, celery, and onion. Saute for 5 minutes.

4Add beans, chicken broth, pepper, rice, and spices. Bring to a boil. Then simmer on medium-low for 1 hour.

5Add washed spinach and bring it back to a boil. Lower heat and simmer for 10 minutes. It can be served with a slice of French bread.
