This is one of the most requested meals to make from my children and the most requested recipe asked to share with friends. So now I will share it with everyone! I would rather have this than regular lasagna. Others say the same. One friend who took the recipe down and made it for her boys told me she had to make it twice a week for a month as her boys kept asking for it.

You'll make this skillet lasagna again and again because it will be a requested meal in your house. It has all the flavor of a lasagna without all the work. Lasagna noodles are cooked in a thick meat sauce to make this a wonderful one-pot meal. The skillet lasagna is topped with a cheesy mixture that adds the yummy gooeyness you want in a lasagna. If you like a little spice, try using Italian sausage. You could even substitute ricotta with cottage cheese if you prefer.

Ingredients For skillet lasagna

  • 1 lb
    ground beef
  • 1/2 lb
    mild Italian sausage
  • 1/2 c
    chopped green pepper
  • 1/4 c
    chopped onion
  • 1 jar
    tomato & basil pasta sauce (your favorite, 24 oz)
  • 1 c
    water
  • 6
    uncooked lasagna noodles broken into 2-inch pieces
  • 12 oz
    small curd cottage cheese
  • 1/2 c
    grated Parmesan cheese
  • 1 Tbsp
    dried parsley
  • 1 lg
    egg
  • 2 c
    shredded Italian blend cheese

How To Make skillet lasagna

  • Add onions and green peppers to browned ground beef and sausage.

    In a large skillet cook ground beef and Italian sausage. Halfway through add the green peppers and onion. Cook until meat is cooked through and onions are clear. Drain.
  • Add sauce, water, and broken lasagna noodles to the browned ground beef.

    Stir in pasta sauce, water, and broken lasagna noodles.
  • Bring mixture to a boil and simmer.

    Reduce heat to medium-low and cover with a lid. Cook for 20 - 25 minutes. Stir occasionally until the pasta is almost tender.
  • Cottage cheese, Parmesan cheese, parsley, and egg in a bowl.

    Meanwhile, in a small bowl, mix cottage cheese, Parmesan, parsley, and egg.
  • Spread cottage cheese mixture over the meat mixture.

    Spread over partially cooked meat mixture.
  • Sprinkle with shredded cheese.

    Sprinkle with the shredded cheese.
  • Place lid on a skillet and continue to cook.

    Cover again and cook 10 - 15 minutes longer or until the cottage cheese mix is set and the pasta is tender.
