We loved this technique for cooking fish. Baking the fish fillet in foil is a fool-proof preparation method. The fish turns out perfectly light and tender with a hint of lemon. Use your favorite white fish and scale the recipe based on the number of people you're serving.

Ingredients For foil envelope fish

  • 1/2 sm
    green pepper, thinly sliced
  • 1/2 sm
    tomato, sliced
  • 1 stalk
    green onion, sliced
  • 1 tsp
    basil, divided
  • 1 tsp
    salt, divided
  • 1 tsp
    white pepper, divided
  • 8 oz
    fresh fish filets
  • 1 sm
    lemon, cut into slices

How To Make foil envelope fish

  • Slices of tomato and green onions with seasonings on a piece of aluminum foil.

    Cut aluminum foil into 12X16 inch rectangle. Place green pepper, tomato, and green onion on the lower half of the foil sheet. Sprinkle with 1/4 teaspoon of basil, salt, and pepper.
  • Fish placed on the vegetables.

    Place fish on vegetables. Sprinkle with the remaining basil, salt, and pepper.
  • Slices of lemon on top of the fish.

    Top with lemon slices.
  • Folding the aluminum foil into a packet.

    Fold the upper half of the foil over the fish and vegetables. Double-fold the edges of the foil to make a tight 1/2-inch seal.
  • Baking the fish.

    Place foil envelope on a baking sheet and bake at 450 for 15 minutes or until the envelope puffs. To serve, cut an "X" on top of the envelope and fold the foil back.
