If you grew up in the South, you most likely have had a version of tomato pie in the summer. This bacon onion tomato pie is full of fresh, sweet tomatoes. Onions in the filling and green onions sprinkled on top add a nice flavor. Bacon mixed with cheese and mayonnaise add the perfect savory flavor to the pie. A crushed cracker topping is buttery and adds a little crunch. Sweet, smoky, and savory, the flavors remind us of a BLT. A delicious pie to use summer tomatoes.

Ingredients For bacon onion tomato pie

19 inch pie shell

5large tomatoes, peeled and sliced

4 slicebacon, cooked and chopped

1sweet onion, sliced or chopped

1 tspsalt

1/2 tsppepper

2 Tbspmilk
-
1/2 cmayonnaise
-
1 1/2 csharp cheddar cheese, shredded

1/4 cRitz crackers, crushed

2 tspbutter, melted
-
2green onions (scallions), sliced

Tomatoes put off a lot of liquid naturally. If you want to avoid that, you can seed the tomatoes. Or, slice the tomatoes, place them on a paper towel with a little salt, and let the salt draw out some of the liquid.

1Prick the pie shell with a fork. Bake at 350 degrees for about 10 minutes.

2Fry bacon. Cook till tender. Drain and set aside.

3Peel and slice tomatoes to fill the bottom of the pie shell. Sprinkle with chopped onion, salt, and pepper.

4Layer more tomatoes; salt and pepper (again).

5Mix mayo, bacon, cheese, and milk. Spoon on top and pat down to cover tomatoes.

6Mix the crushed Ritz crackers and butter. Then spread on top of the pie.

7Bake at 350 degrees for 30 minutes.

8Sprinkle scallions on top.
