A delicious sugar cookie for Valentine's Day or any time of the year. They're tender, buttery, and not overly sweet with a slight lemon flavor. Using a food processor to make the dough, makes these simple and quick to prepare. Where the cookies become special is the toppings you choose. We opted for a simple buttercream and it was perfect. A delicious treat for your sweetheart.

  • 4 c
    all-purpose flour
  • 1 tsp
    baking powder
  • 3/4 tsp
    salt
  • 2 1/2 stick
    butter, cut in pieces
  • 3/4 c
    sugar
  • 1 lg
    egg, plus one egg white
  • 2 tsp
    lemon, lime, or orange zest

Use your favorite store-bought icing to decorate the cookies or, try this easy buttercream frosting.
  • Dry ingredients in a food processor.

    In a food processor, combine flour, baking powder, and salt; pulse to mix.
  • Pulsing in the butter.

    Add butter and pulse until mixture resembles coarse crumbs.
  • Eggs, sugar, and lemon zest added to the food processor.

    Add sugar, eggs, and lemon zest.
  • Blended until mixture resembles wet sand.

  • Dough kneaded and formed into three discs.

    Turn mixture out onto a lightly floured surface; knead several times until dough comes together. Divide into 3 portions; flatten each into a disk. Roll each disk to a 1/8-inch thickness between sheets of parchment. Stack dough (still in parchment) on a baking sheet; refrigerate for 20 minutes.
  • Cutting rolled dough into hearts.

    Preheat the oven to 375 degrees, with racks in the middle and lower thirds. Working with 1 dough sheet at a time, peel off parchment (save for baking). With lightly floured cutters, cut dough into desired shapes.

    Arrange 1 inch apart, on two parchment-lined rimmed baking sheets (reroll scraps, if desired).

    Bake until cookies are set but still pale, 7 to 9 minutes, rotating sheets halfway through. Transfer cookies to wire racks and let cool completely.
  • Frosting the sugar cookies.
