The combination of raspberry and chocolate in these cookie bars is divine. There are four layers of textures and flavor. They start with a crumbly shortbread crust, then a creamy cheesecake, next is tart raspberry jam, and finally a silky chocolate layer on top. Feel free to get creative and change the flavor of the jam. Each bite tastes like a fine dessert. They'll be very popular wherever you bring them.

Ingredients For raspberry chocolate bars

1 call-purpose flour

1/4 cpowdered sugar

1/2 cbutter

1/2 cseedless raspberry jam

4 ozcream cheese, softened

2 Tbspmilk

1 cwhite chocolate chips

4 ozsemi-sweet baking chocolate squares

2 Tbspshortening
How To Make raspberry chocolate bars

1Preheat oven to 375 degrees F. In a bowl combine flour and powdered sugar.

2Cut in butter; mix well.

3Press the mixture into a 9-inch square baking dish.

4Bake for 15-17 minutes or until lightly brown. Allow to cool completely.

5Spread jam evenly over the cooled crust.

6In a separate bowl, beat cream cheese and milk together until smooth; set aside.

7In a small saucepan over low heat, melt the white chocolate chips.

8Add to the cream cheese mixture; beat until smooth.

9Spread evenly over the raspberry jam. Refrigerate for at least 2 hours.

10Cut chocolate squares into small pieces and melt with shortening in a small saucepan over low heat, stirring constantly.

11Spread over the white chocolate layer. Cool completely before cutting into small squares. Store in the fridge.
