The combination of raspberry and chocolate in these cookie bars is divine. There are four layers of textures and flavor. They start with a crumbly shortbread crust, then a creamy cheesecake, next is tart raspberry jam, and finally a silky chocolate layer on top. Feel free to get creative and change the flavor of the jam. Each bite tastes like a fine dessert. They'll be very popular wherever you bring them.

Ingredients For raspberry chocolate bars

  • 1 c
    all-purpose flour
  • 1/4 c
    powdered sugar
  • 1/2 c
    butter
  • 1/2 c
    seedless raspberry jam
  • 4 oz
    cream cheese, softened
  • 2 Tbsp
    milk
  • 1 c
    white chocolate chips
  • 4 oz
    semi-sweet baking chocolate squares
  • 2 Tbsp
    shortening

How To Make raspberry chocolate bars

  • Combine powdered sugar and flour.

    Preheat oven to 375 degrees F. In a bowl combine flour and powdered sugar.
  • Cut in butter.

    Cut in butter; mix well.
  • Press into a baking dish.

    Press the mixture into a 9-inch square baking dish.
  • Bake the crust.

    Bake for 15-17 minutes or until lightly brown. Allow to cool completely.
  • Spread jam over the cooled crust.

    Spread jam evenly over the cooled crust.
  • Beat cream cheese and milk.

    In a separate bowl, beat cream cheese and milk together until smooth; set aside.
  • Melt white chocolate chips.

    In a small saucepan over low heat, melt the white chocolate chips.
  • Mix melted white chocolate chips and cream cheese mixture.

    Add to the cream cheese mixture; beat until smooth.
  • Spread over the raspberry jam.

    Spread evenly over the raspberry jam. Refrigerate for at least 2 hours.
  • Melt chocolate and shortening.

    Cut chocolate squares into small pieces and melt with shortening in a small saucepan over low heat, stirring constantly.
  • Pour chocolate over the cream cheese layer.

    Spread over the white chocolate layer. Cool completely before cutting into small squares. Store in the fridge.
