I make this EVERY year on the Fourth of July. My family looks forward to it and the little ones love to help decorate the top. It's one of my favorite traditions. I hope you like it!

3 cvanilla wafers crumbs

4 Tbspbutter, melted

3 Tbspsugar substitute

1 pkgunflavored gelatin (1 envelope)

1 cmilk

16 ozcream cheese, softened

2 Tbsplemon juice

1 Tbspgrated lemon zest

2 tspvanilla extract

1/3 csugar

1 ptblueberries
-
2 ptraspberries
How To Make fourth of july cheesecake
Test Kitchen Tips
If you prefer a fairly solid crust, bake the crust for 10 minutes at 350 before adding the filling.

1Mix vanilla wafer crumbs, butter, and 3 tablespoons sugar (to taste) in medium bowl.

2Pat evenly on bottom of jelly roll pan, 15 x 10 inches.

3Sprinkle gelatin over milk in small saucepan; let stand 2 to 3 minutes.

4Heat over medium-low heat, stirring constantly, until gelatin is dissolved. Cool to room temperature.

5Beat cream cheese until fluffy in large bowl.

6Gradually beat in milk mixture.

7Beat in lemon juice and zest, vanilla and remaining sugar.

8Pour mixture over crust. Refrigerate until set, 3 to 4 hours.

9Before serving, decorate to look like a flag, using the blueberries for the stars, the raspberries for the stripes.
