lemon glazed blueberry tea bread
I enter our local Farm Fair Culinary Competition on the quest for the coveted Silver Bowl Grand Prize. I have placed over the years with Blue Ribbons etc. but the Silver Bowl escaped me until last year. I finally won it with Blueberry Sour Cream Coffee Cake that I will be posting. The Silver Bowl can not be won unless blueberries are the main ingredient. This was the second runner up in the Bread Category for the 2010 Competition.
Blue Ribbon Recipe
Lemon and blueberries go together like peas and carrots! This lemon blueberry bread is so easy to make. There is just the right amount of blueberries to balance the lemon. You get a bite of blueberries in every bite of this tender bread. The sugary glaze on top hardens slightly and gives the bread a little crunch. Enjoy this for breakfast, a snack, or even a dessert.
Ingredients For lemon glazed blueberry tea bread
- BREAD

2 call-purpose flour

1 Tbspbaking powder

1 csugar

1/4 tspsalt

1 tspfresh lemon zest

1-1/2 cfresh blueberries

2 tspfresh squeezed lemon juice, or more to taste

3 Tbspvegetable oil

2 lgeggs

1 cmilk
- GLAZE

2 Tbspfresh lemon juice

1/4 csugar

1 tspfresh lemon zest
How To Make lemon glazed blueberry tea bread

1Combine flour, sugar, baking powder and salt.

2Stir in blueberries and the lemon zest.

3In another bowl, beat eggs; add milk, oil and lemon juice.

4Add dry ingredients to wet ingredients.

5Stir gently until just moistened.

6Pour into a greased 9x5 loaf pan.

7Bake at 350 degrees for one hour or until toothpick tests clean.

8Prepare glaze by combining all ingredients.

9After removing loaf from the oven, while still warm, brush or drizzle the glaze over the bread.

10Let cool for 10 minutes, remove to a wire rack to cool completely. Cut and enjoy! This is a great goodie gift.
