7 coarsely crushed chocolate sandwich cookies

Cake:
•
2 cups sugar
•
1-3/4 cups all-purpose flour
•
3/4 cup dutch processed cocoa powder (I used Hershey's Special Dark cocoa powder)
•
1-1/2 teaspoons baking powder
•
1-1/2 teaspoons baking soda
•
1 teaspoon salt
•
2 eggs
•
1 cup milk
•
1/2 cup vegetable oil (I used expeller pressed coconut oil)
•
2 teaspoons vanilla extract
•
1 cup boiling water
•
1 tsp. instant coffee granules (optional)
•
Frosting:
•
6 oz. white chocolate (I used Baker's Premium White Chocolate)
•
1 cup butter, room temperature
•
2 tsp. vanilla extract
•
6 cups powdered sugar
•
1/4-1/3 cup heavy cream or milk
•
6-8 additional crushed chocolate sandwich cookies, for assembly
•
Mini oreos for garnish, optional
