New England Clam Chowder

INGREDIENTS
•7lbs medium-size hard-shell clams (topneck or small cherrystone) washed and scrubbed clean. (In a pinch, use 4 cans minced clams and 2 bottles of clam juice)
•4 slices chick-cut bacon cut into 1/4" pieces
•1 large yellow onion, diced
•2 tablespoons flour
•3 medium russet potatoes, peeled and diced
•1/2 cup dry white wine
•1 large bay leaf
•1 teaspoon fresh thyme
•1 cup heavy cream
•2 tablespoons minced fresh parsley leaves
•salt and ground white pepper
