• 1/2 teaspoon cayenne pepper

• Pinch white pepper
•
• Kosher salt and freshly cracked black pepper

• 1 teaspoon dried thyme
•
• ¼ teaspoon dried sage
•
• 2 bay leaves

• 1 pound Andouille sausage, sliced (or any smoked pork sausage)

• 3 cloves garlic, finely minced

• 8 cups water
•
• 2 cups long grain white rice, steamed
