Mustard & Squash Scalloped Potatoes

2 cups acron, kuri, butternut or other orange fleshed squash (1 medium)
8 medium russet potatoes (about 3 lbs)
¼ cup salted butter
1 medium onion, diced
2 cloves garlic, minced
1 tsp fresh thyme
3 Tbsp cornstarch
2 cups 2% milk
¼ cup German-style mustard
1 Tbsp honey
1 tsp onion powder
1 tsp garlic powder
2 tsp sea salt
½ tsp fresh ground black pepper
2 Tbsp yellow mustard seed
