1 tablespoon Extra Virgin Olive Oil
¼ cup Finely Diced Onion (yellow or white (about ½ small onion))
½ cup Wild Rice
3½ cups Chicken Broth
½ teaspoon Salt (plus a pinch and extra at the end if needed (we use kosher salt))
1 cup Long-Grain White Rice
1 tablespoon Butter
8 ounces White Button Mushrooms (sliced)
