2 lbs little potatoes, or larger yellow/red potatoes cut into about 1 – 1 1/2 inch pieces
1 medium onion
3 cups sliced mushrooms
1/4 – 1/3 cup white wine (Chardonnay) *optional
1 – 2 cloves garlic, pressed/minced
1 – 1 1/2 cups heavy whipping cream
1/4 cup grated parmesan cheese (use more if desired)
Salt
Pepper
1/3 cup chopped fresh flat-leaved parsley
