INGREDIENTS
1 (15 ounce) can chickpeas*, rinsed and drained
1 cup frozen peas, thawed
1/2 cup good-quality tahini
1/4 cup cold water, or more if needed
2 tablespoons extra virgin olive oil
2 tablespoons freshly-squeezed lemon juice
1/2 teaspoon each: black pepper and ground cumin
1 teaspoon fine sea salt
2 medium garlic cloves, peeled and smashed
20-25 medium fresh mint leaves, to taste
