2 Tbsp extra-virgin olive oil
•
5 Tbsp mayonnaise

2 Tbsp lime juice

5 ounces cojita cheese

1 Tbsp Parmesan cheese

1 tsp kosher salt
•
1/2 tsp southwest seasonings (or chile powder)

1/4 tsp ground black pepper

1 large egg, lightly whisked
