INGREDIENTS
1 lb medium shrimp, shells left on
6 cups water
1 teaspoon salt, divided
3/4 cup white grits
3 tablespoons butter
6 oz pepper Jack soft block cheese, cubed
1/2 lb chorizo sausage, casings removed
3 tablespoons olive oil, optional
1 1/2 cups Vidalia onion, chopped
1 red bell pepper, seeded and chopped into 3/4-inch pieces
1 jalapeño, seeded and minced
3 tablespoons all-purpose flour
2 tablespoons heavy whipping cream
1 teaspoon fresh lime juice
2 green onions, chopped, plus more for garnish
3 tablespoons fresh cilantro, chopped
1/8 teaspoon black pepper
